After looking over the ingredients, as always, I researched the ones I’m unfamiliar with. Psyllium Husk, for instance, immediately caught my eye. 

According to Healthline, psyllium husk, a form of fiber and prebiotic — a substance needed for healthy colonies of probiotics to grow in the gut.

A healthy colony of good bacteria in the digestive system is essential for healthy immune function. Your body is better able to fight infection, reduce inflammation, and maintain healthy tissue and cells.

The Best Ways To Cook Earth Nut Burgers

Although my first instinct was to grill the burgers, the directions suggest microwaving or baking the burgers for the best results. Of course, I tried baking and microwaving to see which way I preferred. Obviously, the microwave method yielded a hot burger in 30 seconds. 

Whereas baking took only 5 minutes at 350 degrees. Regardless of what cooking method is chosen, this burger cooks quickly and easily for a fast and healthy meal.

Did I Love It?

YES! Not only is this the quickest burger I’ve ever made, but it also didn’t taste microwaved for dried out. Honestly, I thought it might be flimsy, but surprisingly, the Earth Nut Burger stayed moist and was quite tasty. The savory burger tasted “meaty” with an umami flavor. 

Since I wanted to try both cooking methods, microwaving and baking, I microwaved the Savory burger and baked the Mesquite burger. 

On the other hand, the Mesquite burger tasted just like its distinctive barbeque name, similar to being cooked over a fire. Although baked, this burger tasted as if cooked directly on the grill.

Earth Nut Tex Mex Jalapeno Poppers

Earth Nut Jalapeno Poppers

These Baked Tex Mex Jalapeno Poppers are spicy, loaded with protein, and baked to perfection! The perfect appetizer or snack for anytime that has black beans, corn, and tons of cheese. This simple appetizer is a family favorite!

Ingredients: 

  • 2 Earth Nut Hatch Chili burgers (diced and crumbled)
  • 10 Jalapeños
  • ¼ cup black beans
  • ¼ cup sweet yellow corn
  • ¼ cup vegan cheese
  • 1 tbsp Lime Juice
  • 1/2 tsp Cumin
  • 1/2 tsp Salt
  • 1/2 tsp White Pepper
  • 1/2 tsp Garlic Powder

Directions:

  1. Preheat oven to 450˚ F.
  2. Cut each jalapeño in half and remove seeds.
  3. Place your cut jalapeños on a parchment-lined baking sheet and set aside.
  4. Meanwhile, in a medium bowl, place your crumbled Earth Nut burger, lime juice, black beans, corn and seasoning. Combine the ingredients, lightly tossing, make sure not to over-work the crumbles. Spoon the filling into the jalapeños pressing into place so that each chile is liberally stuffed. Sprinkle with your favorite vegan cheese.
  5. Bake your stuffed jalapeños for 12-15 minutes. Baking times will vary depending on how large your jalapeños are and how well you have stuffed them.
  6. Remove baked jalapeños and top with Pico, Guacamole or your favorite topping
